How to Make Bacon Buttermilk Biscuits

Ingredients

  • All-purpose flour: 2 cups (buy here)
  • Baking powder: 2 ½ teaspoons (buy here)
  • Cold, unsalted butter: 5 tablespoons, cut into 1/2-inch dice
  • Kosher salt: ½ teaspoons
  • Cold buttermilk: ¾ cup (buy here)
  • Honey: 3 tablespoons (buy here)
  • Bacon: 3 slices of cooked and chilled thick bacon or 5 pieces of regular bacon, chopped
  • Chives: 3 tablespoons, sliced

Instructions

  • Set your oven to 400 degrees, then line a parchment paper on the baking sheet.
  • Whisk baking powder, flour, and salt in a large bowl. Then, add cold butter cubes and use your fingertips to work the butter into the flour. Do it until you are left with small pea-sized pieces of butter and coarse meal. Put the bowl in the fridge if the butter gets too warm.
  • In a measuring cup, whisk the cold buttermilk and honey together. Add to the flour or butter mixture and stir gently with a rubber spatula until the flour absorbs all of the liquid. Add the bacon and chives and stir until smooth. Gently knead the dough in the bowl with your hands a few times until it comes together and there are no lumps of flour at the bottom of the bowl. Do not overwork the dough.
  • Turn the dough out onto a lightly floured surface and gently knead the dough 3 to 4 times maximum. Roll the dough into a rough rectangle about 1/2-inch thick with a floured rolling pin. Fold it in thirds the same way you’re folding a letter. Make a quarter turn, roll out another ½ inch thick piece, and fold in a third. This will create layers.
  • Roll to a thickness of ¾ inch. Remove the biscuits with a 2-inch cutter or by cutting them into 2-inch squares with a knife. Do not shake the cutter or use a swinging motion with your knife. This will damage your coating. Just slice or stamp straight up and down. Try to baste the biscuits as close to each other as possible, as the biscuits you make from re-rolled scraps are less likely to rise very high. Gather up the scraps and stamp again. Clean the bottom with a pastry brush to remove extra flour. Then, put the biscuits on the tray.
  • Place the entire tray in the refrigerator for ten minutes. This will ensure the butter cools, which forms pockets of steam and creates elevation in the oven. Place in the oven until puffed and golden brown on top, about 11 to 12 minutes. You’ll see the bottoms are darkening. Place the biscuits on the cooling rack and serve while still warm, or reheat in the microwave. Store the extra bacon biscuits in the freezer and warm them in the microwave or oven.
