Instructions:

  1. Put all the ingredients of the cherry blossom cookie altogether on your table
  2. Break up the unsalted butter into small pieces
  3. Take the salt-pickled cherry blossoms and sort them into two parts. Choose the best flowers for the cookie toppings and separate them from the defects
  4. Soak them in a separate bowl to get rid of the saltiness for at least 30 minutes

  14. Remove the plastic wrap, then wrap around the dough with a damp paper towel. Or you can brush a white egg on the dough to make it slightly wet
  15. Sprinkle the sparkling sugar on a tray, then take the dough roll out of the paper towel. Roll the dough on the sugar and slice the dough into 7 mm-thick rounds. Place them on the baking sheet and arrange them in a row with space
  16. Take the cherry blossom cookie toppings, and top all the dough rounds with them. Don’t let the cookies sit out too long, unless you put them in the fridge. This is to prevent the butter from melting too quickly, so the cookies will not be flat
  17. Bake the cookies at 350°F (175°C) for about 15 minutes or until the edges of the cookies get crunchy
  18. Remove the baking sheet from the oven and wait until they are chilled, then transfer them to a cooling rack until set
