  • Heat the oil in a large skillet with straight sides to 325 degrees. Dry the potatoes gradually on paper towels. Then, fry each batch for about three to four minutes and drain on paper towels.
  • Increase the heat of the oil to 375 degrees and fry the potatoes again, gradually, until golden brown. Drain and sprinkle with the adobo spice mixture.
