Also known as paw phia tawd or poh pia tod, Thai spring rolls are a type of fried spring roll that is very similar to Vietnamese or Chinese fried spring rolls. Pad Thai Spring Rolls Recipe

Ingredients

  • 100 grams of glass noodles (vermicelli) soaked and cut into 2 cm or 1 long pieces (buy here)

  • 100 grams of minced chicken
  • 30 grams of grated carrots (buy here)
  • 30 grams of baby corn, thinly sliced (buy here)
  • 1/4 cup of spring onions, green onions, or Asian chives
  • 1 tablespoon of minced garlic
  • 2 tablespoons of fish sauce (buy here)
  • 3 tablespoons of oyster sauce (buy here)
  • 1 teaspoon of sugar
  • 2 tablespoons of vegetable oil for the filling (buy here)
  • 4 cups of canola oil for frying (buy here)
  • 5 to 6 rice paper wrappers or spring roll pastries (buy here)
  • Water to seal the roll

Instructions for the Filling

  • In a large wok, heat two tablespoons of vegetable oil over medium heat. Add the garlic and cook it until fragrant, then add the minced chicken and stir-fry until cooked, about 2 to 3 minutes.
  • Add bean sprouts, baby corn, carrots, and green onions. Stir well.
  • Now, add in the fish sauce, oyster sauce, and sugar, and mix well.
  • Lastly, add the glass noodles and stir until all the ingredients are well mixed and most of the liquid has evaporated.


Assembling Instructions

  • Place one spring roll pastry or wrapper on a clean surface (smooth side down). In case you are using a square wrapper, one corner is facing you.
  • Place a spoonful of the filling in one corner of the wrapper. Overfill the wrapper by folding the bottom corner over and over, pressing firmly to release any air pockets. Continue rolling until you reach the center of the wrapper.
  • Rub water on the top edge of the wrapper, then fold the left and right sides over and continue to roll tightly.
  • Heat canola oil in the wok over medium heat, ready to fry. Slowly slide each spring roll into the wok. Make sure not to rush it to avoid splashing. Fry until golden brown, about 4 to 6 minutes.
  • Transfer to a colander or place on paper towels to drain the oil.
  • Serve and enjoy with your favorite dipping sauce.
