Thai’s Seafood Laksa: A Step-by-Step Method to Make the Asian Favorite Dish

Seafood Laksa Recipe

Ingredients for Laksa Paste

  • One peeled and chopped regular onion
  • 4 medium-sized chopped red chilies (you can add more if you like it spicy)
  • 1 x 2 cm of peeled and finely chopped ginger (substitute with 2 teaspoons of ginger paste) (buy here)
  • 2 cloves of peeled and finely chopped garlic
  • One lemongrass stalk (note: remove the outer leaves, then finely slice the inner part). Or substitute with 1 tablespoon of lemongrass paste. (buy here)
  • One tablespoon of fresh cilantro (also, save the leaves for garnish later)
  • One and a half teaspoons of turmeric
  • One teaspoon of tamarind paste
  • ½ teaspoon of cumin
  • ½ teaspoon of paprika
  • 3 tablespoons of olive oil

Ingredients for the Soup

  • 200 grams rice or vermicelli noodles (or 300 to 400 grams of ready-to-cook vermicelli) (buy here)
  • 2 cod or haddock fillets (approximately 140 grams or 5-oz each) or whitefish with hard flesh and skin removed
  • 12 to 16 peeled and deveined king prawns
  • 200 grams of bean sprouts (mung bean sprouts)
  • One teaspoon of fish sauce
  • 200 ml of full fat coconut milk (buy here)
  • 200 ml of seafood, chicken, or vegetable stock (you can use bouillon for gluten free)

Ingredients for Garnish

  • One teaspoon of rice wine vinegar (buy here)
  • One teaspoon of caster sugar
  • One finely chopped red chili
  • One finely chopped, finger-sized cucumber
  • 1/4 peeled and finely chopped small red onion
  • A small handful of chopped coriander (buy here)


Instructions

  • Soak the vermicelli in a large bowl of boiling water for 8 to 10 minutes, until cooked. Drain, then rinse with cold water so they don’t stick together.
  • Make the garnish by mixing the vinegar and sugar until the sugar dissolves. Then, mix the chili/red onion/cucumber. Put it on one side.
  • While the noodles are soaking, make the laksa pasta. Heat the oil in a medium- to large-sized skillet and add the chopped onions. Cook over medium heat for 5 minutes, until the onions soften and begin to turn transparent. Add the remaining laksa pasta ingredients, stir, and cook for 6 to 7 minutes. Be sure to stir occasionally. Then, carefully use a stick blender to mix the ingredients into a paste. You can also use a mini chopper to do this.
  • Add the coconut milk and broth to the pasta and heat slowly. Then, add the fish, stir, and let it cook for 2 to 4 minutes, until the fish starts to crumble. Add the shrimp, stir, and cook for another minute. The shrimp should start to turn pink, and the fish should be done. Finally, add the bean sprouts and cook for one minute.
  • While the fish and bean sprouts are cooking, divide the noodles between the bowls. Remove the fish, shrimp, and bean sprouts from the soup and pour them on top of the noodles. Then, gently pour the sauce over and around the noodles.
  • Garnish with a sprinkling of coriander and a teaspoon of the chili/cucumber/red onion mixture.
