Recipe: Not Fried Chicken Ice Cream

  • 1.5 quarts of Vanilla Ice Cream (recommended: Breyers “Homemade Vanilla”)
  • 6 Full-Size Twix Bars and Kit Kat Bars (3 of each)
  • 2 ½ cups of white Chocolate Chips (recommended: Ghirardelli)
  • 3 cups of Corn Flakes Cereal, finely crushed

You can choose not to dip the ice cream in white chocolate and simply dip it right into the crushed corn flakes. The corn flakes will stick to the ice cream just as well this way. This means you won’t have a crispy chocolate coating on your fried ice cream, but your dessert will still taste just as delicious.

David Lebovitz’s updated ice cream book offers a collection of classic and innovative recipes, including frozen cocktails and indulgent toppings. With fresh design and new photography, it’s a comprehensive guide to homemade frozen treats.

  1. Begin by placing the Twix and Kit Kat bars in the freezer until they are very cold. Leave them there for a few hours.
  2. Line a baking sheet with parchment paper and ensure you have enough space in your freezer to accommodate the baking sheet. Place the lined sheet in the freezer. Also, get a large cutting board ready for shaping the “drumsticks.”
  3. Use plastic gloves to keep your hands clean, take one of the frozen Twix or Kit Kat bars and scoop a generous amount of ice cream. Mold the ice cream around the candy to create a shape resembling a chicken leg.
  4. Immediately place the formed drumstick on the prepared baking sheet in the freezer. Repeat this process until you have crafted 6 drumsticks, with half using Twix bars and the other half using Kit Kat bars. (Alternatively, you can opt for all of one type of candy if you prefer.)
  5. Allow the drumsticks to freeze for approximately 3 hours.
  6. Place the 3 cups of corn flakes in a ziplock bag and gently crush them with a rolling pin or by hand until they resemble breadcrumbs. Empty the crushed corn flakes onto a large plate.
  7. Fill a small pot one-third full with water and bring it to a simmer. Place a heat-proof glass or metal bowl on top, ensuring it rests just above the water without touching it. (A medium-sized bowl works well for this.)
  8. Add the white chocolate chips and melt them while stirring frequently. Set the melted chocolate aside to cool until it’s warm and melty, but not too hot to handle.
  9. Remove the frozen drumsticks from the freezer. Quickly dip each one into the melted chocolate and then immediately roll it in the crushed cornflakes.
  10. Use your hands to further shape each drumstick into the appearance of a chicken leg. Place each coated drumstick on a baking sheet in the freezer immediately. Repeat this process for all the drumsticks.
  11. Place the baking sheet with the coated drumsticks back in the freezer and freeze them for an additional 2 hours.
  12. Enjoy your “drumsticks,” take them out of the freezer and savor them!
