- Preheat the grill over medium-high heat and grill the chicken. If it stays in the refrigerator, let it sit about 15 to 30 minutes at room temperature first.
- Grill your chicken once the grill is very hot. Grill it for about 3 to 5 minutes, until one side is golden or blackened, depending on your own preference.
- Once the side of the chicken is golden brown, flip it and let the other side cook for about 5 to 7 minutes. Set the heat to medium.
- Once the taco chicken is well cooked, slice it on a cutting board.
- Now that the chicken is ready, you can make the pineapple salsa.
- Combine all the ingredients for the pineapple salsa in a large bowl and mix well. You can serve it immediately or chill it in the refrigerator. If you want, you can grill the pineapple until caramelized over medium heat before mixing with other ingredients. Grill the vegetables as well, and do it in different batches as each type of vegetables require different amount of time to cook. Grilling the pineapple is better, as grilling makes the pineapple have enhanced flavor.
- To make the avocado crema, you just need to mix all the ingredients together in a blender. Make sure it is smooth, and store it in a refrigerator inside an airtight container if you want to use it later.
- Since every layer of the lime pineapple chicken taco is ready, now you just need to assemble them. Grill the tortilla before assembling it, and you can put the chicken, pineapple, avocado crema, and cheese in your desired order.
- You can put the cheese first, then the chicken, pineapple salsa, and avocado crema on top, or in whatever order you like.
