Coconut Milk Popsicles Recipe

Ingredients

  • 2 cups of strawberry slices
  • 2 tablespoons of honey
  • 1½ cup of full-fat canned coconut milk (buy here)
  • 1 teaspoon of vanilla extract (buy here)

Instructions

  1. Add the strawberry slices to a saucepan and heat it over medium heat
  2. Simmer for about 3 to 4 minutes, or until the strawberry gets soft and is nicely coated with the honey
  3. Remove it from the heat and let it cool down to room temperature
  4. Mix coconut milk and vanilla extract in a cup and stir
  5. Fill a half of each mold with the coconut mixture and add strawberry slices
  6. Top them off with the remaining coconut mixture
  7. Once you are done filling, place the lid on, and insert the sticks into the center of each mold
  8. Put your coconut milk popsicles in the freezer for 3 to 4 hours or overnight
  9. Take your molds out of the freezer and enjoy. If you find it hard to demold, let the tray sit for 5 minutes. Fill a bowl with warm water until the water reaches the top border of the molds, and immerse for 30-45 seconds. You can also break your strawberry coconut milk popsicles from any frozen ice by gently twisting the sticks
