- Mint sauce (buy here)
- Salt
- Pepper
How to Make Crust
- Mix panko breadcrumbs, parmesan cheese, basil leaves, salt and pepper in a blender.
- Blend until smooth and light green. Add salt and parmesan if you need more.
- Put it on a large plate, spread it.
How to Make Gordon Ramsay Rack of Lamb
- Preheat the oven to 375°F.
- Heat the cast-iron skillet using medium-high heat. Add two spoons of olive oil, spread it out.
- Season the rack of lamb with salt and pepper to taste perfectly.
- Add the rack of lamb, thyme and garlic into the cast-iron skillet
- When the color of the rack of lamb is browned, about 60 seconds, turn it over and place it on top of the thyme and garlic.
- Add butter, baste rack of lamb with melted butter.
- After 60 seconds, or once both sides of the rack of lamb are browned, put the skillet in the oven, roast for about 10 minutes.
- Remove the rack of lamb from the oven, brush the entire surface of the meat with Dijon mustard.
- Coat rack of lamb with green crust, by rolling it over the green crust and sprinkling it.
- Put it back on the skillet, then put it back in the oven. Roast to medium-rare, until the internal temperature of 125°F.
- Remove the skillet from the oven. Let the rack of lamb stand for about 5-10 minutes. Then slice it according to the bones.
- Serve on a plate, pour the mint sauce on top or around it. And your Gordon Ramsay rack of lamb is ready!
