This time we share a squash casserole recipe from our dear grandma, Brenda Gantt, who of course is very experienced in making it. This Brenda Gantt squash casserole is topped with crackers and cheese, can you imagine how delicious this is?

Brenda Gantt Squash Casserole Recipe

Cooking Equipment

Ingredients

  • 6 big yellow squashes, but not the dark yellow ones (buy here)
  • 1 onion, sliced
  • ½ bell pepper, sliced (buy here)
  • 1 stick butter
  • 2 eggs
  • 1 cup Mayonnaise (buy here)
  • 1 ½ cup Velveeta Cheese / grated cheese (buy here)
  • A handful grated cheese (buy here)
  • Salt
  • Pepper
  • Crackers, crushed coarsely (buy here)

Instructions

  • Cut into pieces and boil the squash until tender. Set aside in a small basin.
  • Heat a sauce pan, add a stick of butter. Add sliced onions and peppers. Sauté briefly until wilted.
  • In a small bowl, add two eggs, beat until smooth.
  • In a large bowl, combine mayonnaise and the beaten eggs . Beat until smooth and creamy. Add Velveeta cheese or grated cheese , stir well.
  • Transfer the mayonnaise, egg and cheese mixture into the basin containing the squash.
  • Add the sauteed onions and bell peppers, salt and pepper to taste, stir until well combined.
  • Transfer the squash mixture to a casserole dish, smooth the surface.
  • For topping, cover the surface by sprinkling crackers on it, from the edges to the center. Then sprinkle a handful of grated cheese over the top evenly.
  • Put the casserole dish in the oven. Bake at 350 for 30-40 minutes.
  • Let cool slightly for 1-2 minutes before eating the Brenda Gantt squash casserole.

Ingredients

  • 2 – 2.5 pounds summer squash (the lighter the color, the better)
  • 1 large onion, sliced (buy here)
  • Salt to taste
  • a half stick of butter
  • 1 cup mayonnaise (buy here)
  • 2 eggs
  • 2 cups shredded cheese
  • black pepper to taste
  • 1 Poblano pepper, seeded, sliced. You can also use bell pepper or sweet banana pepper
  • 1 pack Ritz Cracker (13 crackers), coarsely crushed (buy here)

Instructions

  • Cut both ends of the squash, no need to peel, slice in a circle into the sauce pan.
  • Add water until the squash is submerged and a little salt
  • Boil the squash until completely tender
  • Drain the squash using a colander and shake it for a few minutes to remove the excess water.
  • Put half a stick of butter in the saute pan, heat it up.
  • Add big onion and poblano pepper, saute until fragrant.
  • Put mayonnaise and eggs into a large bowl. Beat until well combined.
  • Add shredded cheese and sauteed onion and pepper, mix well.
  • Add the squash and a little black pepper, stir again until well combined.
  • Place the squash mixture into the casserole dish.
  • Bake in the oven for 30-35 minutes on 350 degrees.
  • After about 20 minutes, remove the casserole, then sprinkle the surface with Ritz crackers.
  • Bake again in the oven for about 10 minutes.
  • Let the casserole cool slightly, and the Brenda Gantt Squash Alabama is ready to eat!
