  • 2 eggs
  • 140 grams of white sugar
  • 28 grams of evaporated milk
  • 140 ml of still water
  • 28 grams of vegetable oil, for making the egg mixture, and a small quantity for greasing the mold.
  • 2 drops of vanilla essence (buy here)

Instructions

  • First, combine and sift flour, custard powder, baking powder, and tapioca flour. Put it aside.
  • Beat the eggs and stir in the white sugar using a wooden mixer. Gradually add the evaporated milk and still water. Make sure to mix thoroughly.
  • Add in the sifted flour mixture to the egg mixture. Then, mix well until a smooth dough is formed. You want to make sure that the dough doesn’t form lumps.
  • Add vanilla essence and mix well.
  • Finally, add vegetable oil.
  • Cover the dough with cling wrap and refrigerate for at least an hour.
  • Remove the egg mixture from the refrigerator half an hour before use. Let it return to room temperature.
  • Heat each side of the mold and brush a light coat of oil on each side.
  • Pour the egg mixture into a large measuring cup for easy pouring into the mold.
  • Pour the egg mixture into the mold that has been filled to 80%. Close the mold and hold the handle firmly so that both sides are tightly closed. Then, flip and turn the closed mold so that the egg mixture fills the mold evenly. Flip to the opposite side of the mold and place it on the stove. Use medium heat to cook on each side for 1 to 2 minutes, until the egg waffles are cooked through and can be easily removed from the mold.
  • Use a fork to remove the egg waffle from the mold. Then place it on a cake cooling rack to cool.
  • Repeat steps 8 to 11 until all the egg mixture is used up.
