Instructions
- To prepare the noodles, boil them according to package directions (30 seconds for fresh noodles) and drain. Stir the noodles with your hands a few times to remove as much water as possible.
- For the sauce, combine all the sauce ingredients with one tablespoon of water in a small bowl. Stir them well until blended, and set aside.
- For the stir-fry, start by heating two tablespoons of the oil in a large pan over high heat until it is hot. Stir the noodles a few times to loosen them, then spread them in the pan. Toss the noodles with tongs to coat them with oil. Continue cooking, stirring, and turning occasionally for two to three minutes, or until the noodles start to turn golden and crispy.
- Turn to medium-low heat and stir in the sauce. Cook and stir for two minutes, or until the sauce is absorbed.
- Move the noodles to one side of the pan and turn the heat to medium-high. Add the remaining one tablespoon of oil, bean sprouts, and green onions to the other side of the pan.
