For cupcake batter

  • 3 ½ cups (430 g) of all-purpose flour
  • 1 ¼ cups (265 g) of caster sugar, superfine (buy here)
  • 3 teaspoons of baking powder
  • ½ teaspoon of fine salt
  • ½ cup (125 g) of unsalted butter, softened
  • 2 large eggs
  • 1 ½ cups (375 ml) of whole milk, full-cream
  • ½ cup (125 ml) of vegetable oil
  • 2 tablespoons of Greek yogurt
  • 1 teaspoon of vanilla bean paste or vanilla extract (buy here)

  • ½ cup (150 g) of strawberries, cut into small pieces, and freeze

For buttercream frosting

  • 125 g of unsalted butter, softened
  • 3 tablespoons of maple syrup

For croutons

  • White bread, sliced into cubes
  • Cinnamon sugar (mix 50 g of caster sugar with 1 tablespoon of cinnamon powder)

  1. Preheat your oven to 356°F
  2. In your mixer bowl, stir in the flour, caster sugar, baking powder, and salt. Use low speed to combine all these ingredients and add butter
  3. Mix again until the texture is close to fine sand
  4. In another mixing bowl, add milk, eggs, yogurt, oil, maple syrup, and vanilla extract and stir to combine. Slowly add this wet mixture to the mixer bowl
