- 1.25 cups (280g) unsalted butter
- 2 cups (275g) all purpose flour (buy here)

- 2 tsp (8g) corn starch (buy here)
- 1.5 tsp (5g) kosher salt (buy here)
- 1/2 tsp (6g) baking soda (buy here)
- 1.25 cups (285g) brown sugar (buy here)
- 1/2 cup (115g) white granulated sugar (buy here)
- 2 eggs
- 3 egg yolks
- 2 cups (165g) coarsely chopped walnuts (buy here)
- 1 lb (450g) coarsely chopped chocolate (buy here)
Step-by-step Joshua Weissman Chocolate Chip Cookies
- Melt unsalted butter in a saucepan then set aside to cool.
- Combine all-purpose flour, cake flour, cornstarch, kosher salt and baking soda in a medium mixing bowl. Mix thoroughly.
- Add the brown sugar and granulated sugar to the bowl of the mixer. Beat using a mixer at medium speed and then slowly add the butter.
- Once mixed, add the eggs one at a time followed by the egg yolks.
- When it’s smooth, switch to the paddle attachment. Slowly add flour mixture (which is in mixing bowl medium). Mix well.
- Add coarsely chopped walnuts and coarsely chopped chocolate. Mix thoroughly.
- Place in a bowl, cover with plastic wrap, then chill in the fridge for 45 minutes or so.
- Form the dough into balls. Take it using ice cream scoop disher is much better. To get the same cookie size, weigh each dough ball to 6oz, or less for smaller cookies.
- Place the dough balls on a parchment-lined baking sheet. Leave enough space or the dough balls will flatten out.
- Bake in the oven at 425F for 10-13 minutes.
