  • Mix panko breadcrumbs, parmesan cheese, basil leaves, salt and pepper in a blender.
  • Blend until smooth and light green. Add salt and parmesan if you need more.

  • Preheat the oven to 375°F.
  • Heat the cast-iron skillet using medium-high heat. Add two spoons of olive oil, spread it out.

  • When the color of the rack of lamb is browned, about 60 seconds, turn it over and place it on top of the thyme and garlic.

  • Put it back on the skillet, then put it back in the oven. Roast to medium-rare, until the internal temperature of 125°F.
  • Remove the skillet from the oven. Let the rack of lamb stand for about 5-10 minutes. Then slice it according to the bones.
