  4. Once formed, place the patty on the grill pan. If cooking quickly, press it down slightly. Add the bacon and the onion, seasoned with salt, pepper, and oil.
  5. Mix mayonnaise and Sriracha to make Sriracha mayo. Adjust the amount of Sriracha to taste.
  6. Flip the onions and bacon once they are cooked on one side. Flip the burger once it is seared and cooked through on one side. Only flip the burger once.
  7. Toast the buns on the grill pan for about 1-2 minutes.
  8. As the burger finishes cooking, add a slice of cheddar cheese to it. Add a small knob of butter and cover with a bowl or pot to melt the cheese.
  9. Remove the bacon and onions once they are cooked, draining excess oil and fat.
  10. Once the cheese is melted and the burger is cooked, remove from heat and assemble: Bun, Sriracha mayo, lettuce, tomato, onions, burger, bacon, more onions, Sriracha mayo, and the top bun.
