Ingredients

The Burger :

1 pound 85/15 ground beef (mixture of chuck and brisket)
2 ounces unsalted butter, frozen
1 tablespoon granulated garlic or garlic powder

1 cup baby arugula
1 plum tomato, sliced
Maldon salt and cracked black pepper

2 brioche burger buns
Butter for toasting

Sriracha Mayo:

1/4 cup mayonnaise
2 tablespoons Sriracha sauce
Pinch of salt

Instructions

  • Preheat a gas or charcoal grill to medium heat on one side and low heat on the other.
  • In a medium mixing bowl, add the ground beef. Grate the frozen butter using a box grater and mix it evenly into the beef.
  • Shape the beef mixture into two patties, about 4 inches wide and 1 inch thick, so they will shrink to the size of the bun when fully cooked. Place the patties on a sheet tray or plate and chill for at least 10 minutes. Season all sides of the patties generously.
  • In a small bowl, combine the mayo, Sriracha sauce, and salt. Set aside.
  • Brush both sides of the patties with oil and place them on the medium heat side of the grill. Cook for about 2 minutes to create grill marks, then rotate the patties 90 degrees and cook for another 2 minutes for crosshatch marks.
  • Meanwhile, place the bacon slices and mushroom caps (cap side up) on the medium heat side of the grill.
  • After 3 minutes, flip the bacon and mushrooms. Crack a raw egg into each mushroom cap to hold the egg. Season the eggs with salt and pepper.
  • Flip the beef patties and repeat the cooking steps for the second side (about 4 minutes total). Move the patties to the low heat side of the grill once they reach medium-rare doneness (cover the grill for a few minutes if you prefer a more well-done burger before adding the cheese).
  • If the bacon is cooked, remove it from the grill. If not, move it to the low heat side.
  • Lightly butter the brioche buns and place them on the low heat side of the grill. Cover the meat with Swiss cheese and close the grill lid for 1-2 minutes, checking the buns to avoid burning.
  • Remove the cooked bacon and brioche buns. Roughly chop the bacon.
  • Place the buns on a cutting board with the inside facing up. Spread about 1 tablespoon of Sriracha mayo on each bun. On each bottom bun, layer 1/4 to 1/2 cup of arugula and two slices of seasoned tomato.
  • Add a generous amount of chopped bacon on top of the tomatoes. Place a cheeseburger on top of the bacon. The egg inside the mushroom cap should have cooked whites but a runny yolk (cover the grill longer if you prefer a more cooked egg).
  • Place the egg/mushroom caps on top of the cheeseburgers and cover with the mayo-spread top bun.
  • Secure the burger with a bamboo skewer. Serve and enjoy!
