Ingredient
Pudding :
- ¾ cup Dates puree, pits removed (buy here)
- ¼ cup baking soda (buy here)
- ¼ cup boiling water
- 3 tablespoons unsalted butter (buy here)
- 6 tablespoons brown sugar (buy here)
- 1 tablespoons golden syrup (buy here)
- 1 egg
- ½ cup + 2 tablespoons (78g) all purpose flour (buy here)
Toffee Sauce :
- ½ cup (113g) unsalted butter (buy here)
- 1 cup (225g) packed brown sugar (buy here)
- 1 tablespoon (15ml) double cream (buy here)
- 1 tablespoons golden syrup (buy here)
Serving :
- 2 tablespoons Creme fraiche (buy here)

How to make Gordon Ramsay sticky toffee pudding
Pudding :
- Preheat microwave for 30 seconds at 100 power.
- Slice the dates thinly, then put them in a small bowl.
- Add a little teaspoon of baking soda (bicarb) to the bowl to help the dates break down.
- Add a little water that will start almost pureeing the dates. Stir, then put in the microwave. Set power 100 and duration 60 seconds.
- Put butter and brown sugar in a mixing bowl. Lightly beat it using the back of a wooden spoon.
- Once mixed evenly and in the form of cream, add the syrup, stir briefly.
- Add eggs, stir until smooth using a spatula.
- Using a small whisk, whisk the dough until it becomes a very smooth and non-dripping cream.
- Remove the dates from the microwave, mix into the cream mixture.
- Add the flour through a sieve. Sieve the flour so that there are no lumps. Mix thoroughly with a spatula.
- Prepare a dry small bowl, spread a thin layer of butter all over the inside of the bowl. Add a spoonful of flour, shake it around so that it covers the entire butter layer. This will make the pudding easy to remove from the bowl later.
- Put the cream mixture into the bowl until it is two thirds full.
- Tap the bowl gently so that the surface of the cream becomes more flat.
- Wrap the top of the bowl with kitchen paper, bake it in the microwave for 60 seconds. The paper will help to steam the top.
- Remove the pudding from the microwave, remove the cover. Then put it back in the microwave for 60 seconds.
- Take the pudding from the microwave. Use a knife to trim around the edge of the pudding from the bowl. Place the pudding on a plate by turning the bowl upside down.
Toffee Sauce :
- Heat a pan, add butter and brown sugar, stir and let it boil for a while.
- Pour the syrup and double cream into the melted butter and sugar pan, stir until smooth and thickened.
Serving :
- Prepare creme fraiche in a small bowl.
- Pour the brown toffee sauce over the pudding and over the creme fraiche.
